Egg Rolls


NOTE: this picture does not do these justice.
1lb sausage cooked and drained
3 chicken breasts cooked and shredded
Grate 1-2 carrots
dice 1 stick of celery ( I do mine very small)
dice 1/4 onion
Mix together. Wrap in egg roll wraps. Deep fry in oil until slightly browned. Serve with sweet and sour sauce and rice.
You may add shredded cabbage if you want. The recipe doesn't call for it, and I've never tried it, but I'm sure it would be fine. You may even try baking them, but I've never tried it either.
You can find the wraps in the tofu area in the grocery store which in mine is by the fresh fruit and veggies. I usually serve it with Rice a Roni fried rice. I would love a good recipe for homemade fried rice if anyone has one.
This recipe makes a ton of filling! I made it tonight and it ended up making 21 egg rolls, with plenty of filling to spare. I froze about 12 egg rolls uncooked to cook later, and I also froze the left over filling. (can you tell I'm all about freezing so I can have a quick dinner later!)
