Dorito Enchilada Casserole


1 pound hamburger(cooked)
1 can corn(drained)
15oz can chili with beans
1 can cream of chicken soup
1/2c water
10oz can enchilada sauce
8oz can tomato sauce
1 pkg Doritos(any flavor but I use cheese)

Mix all ingredients except Doritos. Line Doritos in bottom of 9x13 pan. Leaving just enough to put a thin layer on top. Then poor the wet ingredients over the Doritos. Mix well to cover everything. Then put a thin layer of Doritos on top and cover with cheese. Cover with tinfoil and bake at 350 for 20-30 minutes. Uncover and bake for 5-10 more minutes. Serve with a dollop of sour cream.

This recipe makes a ton!! I usually make it all, put it in a 8x8 pan, and freeze half of the sauce for another time. Which in turn makes for a fast dinner on a later date. It's a very kid friendly recipe!

Yum, thanks for the recipe LeAnn. We tried it and all the family loved it except Ciarra who doesn't like Doritoes. She just didn't like the Doritoe part. (Crazy Girl)I thought the Doritoes tasted like Fritoes in the bottom of the pan. I suppose you could use them in the recipe instead of Doritoes if you preferred. Fun and easy recipe! Thanks!

Another good recipe! My whole family loved it even the boys. My boys don't eat anything but in the words of Noah, "This is so good it almost exploded my head off!"
