Cheese Filled Manicotti

I got this recipe out of the Ball family cookbook on page 225. I love pasta, however Matt only feels the same way if it has meat in it. But he and I really like this recipe. Matt even said he would eat it if I made it again.

Ingredients:
1 (8 oz) package manicotti tubes
1 (15 oz) ricotta cheese
2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese
1 egg
1 Tablespoon dried parsley
1/4 tsp. salt
1/4 tsp. pepper
1 (29 oz) jar spaghetti sauce

Prepare the pasta as directed on package except only cook for about 5 minutes. Drain and rinse with cold water. Lay on wax paper while waiting to fill. Mix ricotta, 1 1/2 cups mozzeralla cheese, 1/4 cup parmesan cheese, beaten egg, parsley, salt and pepper. Spoon mixture into ziplock bag and cut corner off to pipe into tubes. Place a thin layer of spaghetti sauce in greased 9 by 13 inch pan. Place the tubes in the pan and pour remaining sauce over the top. Sprinkle with remaining cheese and bake at 350 for 35 minutes or until hot.

**Side notes the recipe says to lay them on wax paper, but I didn't have any and the box of pasta said I could lay them on foil. It worked just as good. I would also boil the noodles a little longer next time. Ours were still a little hard when we ate them, but it was oh so yummy!

I havent made this recipe before but I use my lasagna recipe to make these. If Matt whats meat just add some ground beef to the spagetti saucse. That's what I do.

OOOOOHHHHH that looks really good. I LOVE pasta. Michelle, have you ever tried the Chicken Parmesan dinner from Bertoli's? It's in the frozen dinner section and is soooo good. I eat the whole bag by myself. I would LOVE the recipe for that baby....

We tried this and it was really good. I did add hamburger to the sauce because my family likes that. Yum!
